Discover the unique and traditional flavours and aromas of home cooking through these three masalas that will serve as a perfect introduction to the wide repertoire of Goa’s eclectic cuisine.

Aamso Tiksso

This masala, strongly identified with Goan cuisine and commonly known as Ambotik-a combination of words in Konkani that means tangy and spicy-is exactly what it is-tangy and spicy, delicately balanced.

Gavli Bhaji

An ancient masala recipe from the Gavli community, one of the earliest settlers in the region. Being a closed community, their masalas were largely unknown and untried but now form the cornerstone of vegetarian Goan cuisine.

Soongta Hooman

The masala behind the traditional prawn curry with the bright orange coloured gravy, subtle aroma and medium heat that’s a staple in every Goan household, and served in restaurants as `Goan Prawn Curry’.

Mori Ambotik

You need 1 kilo of fresh Mori (shark) cut into bite-sized chunks. Season them with salt and keep aside for 10 minutes. Heat 2 to 3 tbsps of oil in a kadai and fry 1 large onion, thinly sliced, until it turns golden. Add 2-3 tbsp heaps of Aamso-Tiksso masala and fry for another min or two. Add more for more gravy. Add a cup of warm water, put a lid on, and allow it to come to full boil. Now add the shark pieces and cook over a low flame with a lid on until the oil separates and the fish turns firm to the touch. Adjust for salt, garnish with fresh coriander leaves and serve. For increased sourness, you can a few pieces of kokum (Garcinia indica).

Potato Bhaji

Heat 2 tsps of oil in a kadai. Add 2 medium onions finely chopped and fry until they become translucent. Add 1 tsp of ginger-garlic paste and continue frying until the onions turn golden brown. Add 1 medium tomato, cut into small pieces, and fry them until they become soft. Add 1 kilo of potatoes cut into bite sized pieces, and mix throughly. After a minute, add 2 tbsps of the Gavli Bhaji masala and mix, coating the potatoes throughly. Add a cup of water and a tbsp of salt. Cover with lid and let it cook for about 8-10 mins. Add a cup of thick coconut milk and cook until the potatoes are well done. Garnish with fresh coriander leaves and let it rest for 5 mins. Then serve.

Prawn with Okra

Take 2-3 medium or large bangda (mackerel), gutted and throughly cleaned. Create slits on the sides with a sharp knife. Season it with salt and lime juice and leave it aside for another 10 mins. Apply the Green Recheado masala both on the inside and outside of the fish generously. Stuff the masala in the slits. Set aside for another 10 mins. Coat the fish lightly with rava (semolina) by rolling the fish in it. Heat 2-3 tbsps of oil in a frying pan and shallow fry for the fish for about10 mins on either side. Take them off the pan and allow it to rest for 2 mins. Serve hot.
