Mutton Masala

Mix 1 kg of mutton pieces with 2 tsps of ginger-garlic paste, 1/2 tsp turmeric powder, 2 tsps coriander leaves paste, juice of 1 lemon, 1 large sliced onion and salt. Keep aside for an hour or overnight. Pressure cook the mutton until it’s 80% done. In a kadai, fry 1 sliced large onion in 3 tsps oil and 2 tsps ghee until they brown. Add 1 chopped tomato and cook to a paste. Add 1/2 tsp turmeric powder and 1 tsp of ginger-garlic paste. Add 4 tsps of the Chandrawado Mutton masala and continue to fry until the oil starts to separate. Add the mutton along with the water and cook covered for 15 mins. Garnish with mint and serve.

King fish in Banana Leaf

Take 3 large slices of King fish (Surmai), about 1/2 inch thick. Season with salt and a tsp of lime juice. Keep aside for 10 mins. Take a spoonful of Fisherman’s Barbecue masala and rub it onto the fish, coating the surface evenly on both sides. Repeat with other slices. Cut a piece of banana leaf big enough to cover the fish and grease it with some oil. Place the slice in the middle and fold the leaf to form a parcel. Tie with butcher’s twine. Repeat with other slices. Moisten a frying pan with oil and place the parcels and shallow fry 10 mins on either side or until the leaf wilts and takes on a dark brown colour. Serve.

Tisryo Masala

Take 500g of clean Tisryo (clams), split in two or shelled. In a deep bottomed vessel, fry 2 medium onions, thinly sliced, in 2 tsps of oil until they turn soft and translucent. Add 3 tsps of the Kunbi Xasti masala and continue to fry for a minute. Add a cup of warm water and a minute later add a cup of freshly grated coconut. Mix well and let it cook for about 5 mins. Add the clams now, while stirring continuously to mix with the masala thoroughly. Add salt as needed. Add some chopped coriander leaves and give it a good mix. Cover and cook for about 10-15 mins. The water should have evaporated leaving a thick gravy. Remove from flame, let it rest for 5 min, then serve.

This is a perfect combo to prepare non veg dish. Experimenting with this combo was so convenient. I tried all 3 masala for different dishes and all I could say is WOW! I am getting the bigger packs. Fisherman's Barbeque is one of my favorite.
