Mutton Biryani

Cook 500g of basmati rice and keep it aside. Marinate 1 kg of mutton pieces on the bone with 2 tsps of curd, juice of 1 lemon, 1 tsp of ginger-garlic paste, 1 tsp of turmeric powder, and salt. Keep aside for 1hr or overnight. Pressure cook the mutton until it’s 80% done. In a kadai, add 5 tbsps of oil, 2 tbsps of ghee and fry 3 sliced onions. Add the puree of 2 tomatoes and cook until the oil separates. Add 3 tbsps of the Goemchi Biryani masala and fry for 2 mins. Now add the mutton to the masala and fry for 5 min. Add rice to form a layer over the mutton. Cover and cook for 15 min. Garnish with fried onions and mint leaves.

Chicken Shagoti

Marinate 1 kilo of chicken with 2 tsps of ginger-garlic paste and salt. Keep aside for at least 1 hour. Heat 4 tsps of oil in a kadai, add 2 medium onions finely chopped. Fry until they become translucent. Add the marinated chicken and mix throughly. Fry for a couple of mins and then add a tsp of turmeric powder. Mix. Add 4 tsps of the Pedne Shagoti masala stirring well so that the chicken pieces are well coated. Add a cup of warm water and a tsp of salt. Cover with lid and cook under low flame for 10 mins. Add thick coconut milk and cook for another 5 mins. Garnish with coriander leaves and serve.

Bangda Rawa Fry

Take 2-3 medium or large bangda (mackerel), gutted and throughly cleaned. Create slits on the sides with a sharp knife. Season it with salt and lime juice and leave it aside for another 10 mins. Apply the Green Recheado masala both on the inside and outside of the fish generously. Stuff the masala in the slits. Set aside for another 10 mins. Coat the fish lightly with rava (semolina) by rolling the fish in it. Heat 2-3 tbsps of oil in a frying pan and shallow fry for the fish for about10 mins on either side. Take them off the pan and allow it to rest for 2 mins. Serve hot.
